Carne Maturada

A carne maturada é mais saborosa e macia que carnes semelhantes que não passam pelo processo de maturação.
A maturação de carne a seco consiste essencialmente na criação de condições óptimas que permitem que as fibras da carne seja quebrada por enzimas. Na maturação a carne fica em descanso várias semanas, nesse período as enzimas quebram o tecido muscular amaciando a carne, o ambiente seco desidrata ligeiramente a carne potenciando assim o seu sabor. Todo o processo é realizado a um temperatura e humidade rigorosamente controladas de forma a garantir toda a qualidade e segurança.
